Cook a Roast Beef for 25 minutes? Really??

Roast Beef Recipe for a Super Sunday Roast Dinner.

foodicity

I admit it. Sometimes I have to try things just to see if they work. Sometimes, they are failures. Like overnight oatmeal in a slow cooker (ick). But sometimes,  weird sounding recipes work.

I make a rib roast once every few years, and this was the week.   I remember someone once saying they put the roast into a hot oven, turned the oven off, and 2 hours later …perfection.  Well folks, that is almost how it works, and yes, it is pretty incredible.

Here’s how I did it:

1 beef rib roast, (mine was approximately 5 pounds)

1-2 tablespoons Montreal steak spice, OR coarse salt and crushed peppercorns

a few sprigs of rosemary

a few cloves garlic, peeled and minced

Remove roast from refrigerator.

Let it stand on counter for 30 – 60 minutes.

Preheat oven to 500 degrees.

Dry the roast as well as you can.

Bourbon BBQ Sliders with Garlic Aioli

The Home Heart

Oh my, these little sammies were sooooo very good. I must tell you now that 1 pound of ground beef will only yield 10 (2 oz. each) burger patties, and 10 sliders is just not enough for the four of us. So if you decide to make these awesome sliders, make 2 lbs! The recipe for the bbq sauce and the aioli is plenty for twice the patties. All you have to do is saute a little extra onion, garlic, and peppers.

This recipe is in 3 parts, so I am going to start with the aioli since it will need some time to chill. I recommend any recipe that has lots of mayo in it to refrigerate as long as possible so all the flavors can infuse and there won’t be an overwhelming mayo taste.

Really easy to do, really indulgent but Gluten Free.

397g Tin of Nestlé Carnation Caramel
50g Butter
200ml Double Cream
Table Spoon of Icing Sugar
Two Bananas Sliced.
150g Free From Digestives or any other brand of Gluten Free Digestives. ( You can swap for

Method
Preheat oven to 180
Blitz the digestives in a food processor,If you haven’t got a a food processor you can put the biscuits in a plastic bag and bash with a rolling pin.
Melt the butter then add the biscuit and mix.
Line a 20 inch Pyrex Pie dish with a circle of baking paper.
Then press down the crumb base with a spoon making sure you bring the crumbs up the sides to contain the filling later.
Place the base in the oven for ten minutes then leave to cool.
Then place a small layer of the Carnation Caramel onto the crumb base. Place a layer of banana on top if the Caramel.
Repeat to creat another layer then smooth over more Caramel over the top in line with the top of the edges if the crumb base.
Chill for 20 minutes.
While the pie is in the refrigerator whip the cream and icing sugar till it peaks.
Take the pie out if the fridge and put the whipped cream on top of the pie.
